This hearty, comforting potato soup is a simple yet satisfying dish to serve on meatless Fridays during Lent. Made with humble ingredients, potatoes, onions, celery, and milk, it’s warming, nourishing, and easy to prepare. Pair it with crusty bread, cornbread, or a simple salad for a meal that’s both humble and filling.

Homemade Potato Soup
2 medium onions, chopped
2 cups of chopped celery
3 tablespoons olive oil
5-6 cups of cubed potatoes
4 cups of water
4 cups of whole milk
2 teaspoons salt
2 teaspoons pepper
Additional salt and pepper to taste
Sauté onions and celery in olive oil. When translucent and tender. Add potatoes, water, milk, salt, pepper. Stir until combined. Bring to a low boil. Cover and cook until potatoes are tender. Use an immersion blender to partially blend the soup. Top with cheddar cheese and green onions. Serve with hot cornbread and enjoy!
